This risotto can make for an excellent, simple side dish, or you can add your favorite protein to make it a complete meal.
1 1/2 cups of cauliflower rice
2 tablespoons of olive oil
1/2 cup of mushrooms, sliced thin
1/4 cup of onions
1 tablespoon of garlic, minced
1/4 cup of chicken broth
2 tablespoons of Parmesan cheese
1 tablespoon of parsley
Heat mushrooms, garlic, onions and olive oil in your bonbowl on medium for 3 minutes. Add the cauliflower rice and chicken broth, and heat on medium for 5 minutes or until the broth has been absorbed and the cauliflower is soft. Top it off with Parmesan cheese, parsley and salt & pepper to taste.
