Quinoa Veggie Bowl

Simple, healthy, quick.

Ingredients

1/2 of a small zucchini, cut into small cubes

5 cherry tomatoes, halved

½ of a green pepper, sliced thin

1 bag of Seeds of Change Quinoa and Brown Rice Mix

2 tablespoons of Parmesan cheese

Directions

Add zucchini, tomatoes and peppers to bowl and saute with olive oil on high for 4 minutes. Once veggies have softened, add the quinoa/brown rice mix and heat for 3 more minutes on medium, stirring occasionally.  Top if off with Parmesan cheese and enjoy!
