Blueberry and Farro Salad

The blueberry and farro salad is an awesome dish to make in the summer for a fresh lunch or light dinner.  I like to make it in the morning and bring it to work for lunch as it is best served chilled.


  • 1 package of Nature’s Earthly Choice farro (or ⅓ cup of uncooked farro with ⅔ cup water)
  • ¼ cup of blueberries
  • ⅓ of a cucumber, peeled and chopped
  • 2 tablespoons of feta cheese
  • Olive oil dressing 


Add entire package of precooked farro to bonbowl and cook on medium for 3 minutes or until hot. Let farro cool, then add blueberries, cucumber and feta. Top if all off with olive oil dressing and enjoy!
