Green Rice and Sweet Potato Power Bowl (Spicy!)

Ingredients

  • Sweet potatoes
  • ½ medium sized sweet potato
  • 1 tablespoon oil oil
  • 1 teaspoon sea salt
  • ½ teaspoon paprika

Black Beans  

  • ¼ cup black beans
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • 1 teaspoon lime juice
  • Sea salt (to taste)
  • Freshly ground black pepper (to taste)

Green Rice

  • ¼ cup long grain brown rice
  • ½ cup vegetable broth
  • ½ cup baby spinach, chopped
  • 3 tablespoons cilantro, chopped
  • 2 tablespoons jalapeno, chopped
  • 1 clove garlic, minced

Directions

Green rice is one of my favorite side dishes to have with a number of different veggies and proteins. You can spice this one up or down with the amount of jalapeno that you add.  

Sweet Potatoes

Add olive oil and sweet potatoes to your bonbowl and cook on medium for 8 minutes, mixing occasionally. Add paprika and sea salt and mix. Set aside.

Black Beans

Add beans, cumin, chili powder, lime juice and sea salt to your bonbowl. Heat on medium for 5 minutes and then set aside.

Green Rice

Add rice, and vegetable broth to your bonbowl. Heat on medium for 12 minutes. Once rice has been cooked, add spinach, cilantro, jalapeno, and garlic. Mix thoroughly. Then add the sweet potatoes and black beans. Enjoy!
